Crock Pot Potato Soup

This week’s recipe is Crock Pot Baked Potato Soup. I love potato soup and with the weather cooling down I have had a craving for it. I never thought of making soup in a crock pot, but now that I think about it, it really is a great idea! Thanks FoodBasics101.com for the recipe. It looks delicious, and I can’t wait to try it.


Ingredients:
3 3/4 lbs russet potatoes, peeled and cubed (about 5 large)
1/2 onion, chopped
3 cans chicken broth (14 oz. cans)

1/4 cup butter
2 1/2 teaspoons salt
1 1/4 teaspoons pepper
8 bacon slices, cooked and crumbled, divided
1 cup milk
2 cups shredded cheddar cheese
3 tablespoons chopped fresh chives, green onion tops or bacon bits

Sour cream (optional)
