When I was younger, we would eat the individual Banquet Chicken Pot Pies. They were okay, but certainly not something I craved. Then, we had a friend bring us her Homemade Chicken Pot Pie Recipe after my youngest son was born. Oh my goodness, it was delicious so I knew I wanted to share it with you. I’ve also made it for my freezer meal group.

Ingredients:

Refrigerated Pie Crust
3 medium chicken breasts, shredded
1 bag frozen Veg All or mixed vegetables
1 can Cream of Potato Soup
1 can Cream of Celery Soup
1/2 can 2% or skim milk
Salt
Pepper
Thyme

Directions:

  1. Place refrigerated pie crust in bottom of 9×9 square pan or pie pan
  2. Mix shredded chicken, vegetables, Cream of Potato Soup, Cream of Celery Soup, milk (use one of the soup cans and fill half way), salt, pepper, and thyme in a separate bowl
  3. Add ingredients to pie pan
  4. Cover with pie crust and pinch to close
  5. Cut slit in top
  6. Bake for 30 minutes or until golden brown at 375 degrees
